Karl Brooks, U.S. EPA Midwest Regional Administrator, checks out the process of sorting food waste at the University of Missouri- Kansas City with Melissa Barton of UMKC. Brooks applauded the Universityâs participation, joining over 60 colleges and universities pledging to feed people, not landfills, as part of EPA's Food Recovery Challenge. Organizations can commit to reducing the amount of food sent to landfills through prevention, donation and composting. The Challenge guides organizations toward leaner purchasing practices, diverts surplus food to hunger-relief organizations and suitable food scraps, to composting or animal feed.
